Spicy Peanut Lime Noodles with Grilled Shrimp recipe
12 oz. Chinese style flat (wide) egg noodles

24 pc. medium size raw shrimp

juice of 1 lime

1 clove, pressed


1/4 cup smooth peanut butter

3 Tbsp. Sriracha chili sauce

1/4 cup toasted sesame oil (brown colored)

1/4 cup sugar

1/4 cup all purpose soy sauce

1/4 cup unseasoned rice vinegar

1/2 tsp. salt

juice of 1 lime

3 carrots, slivered

6 green onions, shredded 1" (reserve 2 for garnish)

leaf lettuce, 1 piece for under each serving

bamboo skewers, soaked in water

1. Boil noodles until done per package directions and rinse in cold water to cool. Drain well.

2. Peel, devein the shrimp, but leave the tails on. Mix with the lime juice and garlic. Marinate for a few minutes. Place 2 shrimp on each skewer and arrange on a broiling rack or grill and sprinkle with salt and pepper. Cook approx. 1 minute each side or until done.

3. Blanch carrot slivers and rinse in cold water.

4. Mix dressing in a blender or food processor.

5. Mix noodles, carrots, green onion shreds and dressing together. Serve on a leaf of lettuce with 2 broiled shrimp on top. Garnish with additional green onions if desired.
