4 cups cold, cooked long grain rice
1 1/2 cups frozen bay shrimp, thawed (canned shrimp is too strong)
1 cup frozen mixed vegetables (peas, carrots, corn)
2 green onions, chopped
3 Tbsp. all purpose soy sauce
1/2 tsp. salt
1/2 tsp. sugar
1. Thaw, rinse and drain shrimp. Thaw frozen vegetables and drain.
2. Heat 2 to 3 Tbsp. oil in your wok and stir fry the cooked rice over medium-high heat. Break apart any clumps of rice with your spatula.
3. Add the shrimp, mixed vegetables, onions and stir fry until hot.
4. Sprinkle in the salt and sugar. Drizzle in the soy sauce until desired color is obtained.

• Sliced mushrooms
